先付《1st appetizers》
日替わりの季節の野菜の一品
Daily seasnal vegetable dishes.

前菜《5 kinds of 2nd appetizers》 ※All served together.
① レタス、新じゃが芋、空豆のカシューナッツ和え
Lettuce, seasonal potatoes and fava beans with cashew nuts.
② ワカメとエノキ茸のポン酢寒天寄せ
Ponzu Agar Terrine with Wakame seaweed and enoki mushrooms.
③ スナップエンドウの舞茸、人参のおから蒸し
Steamed snap peas with maitake mushrooms and carrot Okara(tofu pulp).
④ 春キャベツの柚子胡椒マリネの豆腐包み揚げ
Marinated seasonal cabbage with yuzu kosho wrapped in tofu and deep fried.
⑤ カブの番茶の燻製 フキノトウ味噌焼き
Baked turnip smoked with Bancha tea and topped with butterbur scape miso.

お椀《Soup》
ほうれん草と胡麻のすりながし 新玉ねぎ、茗荷添え
Soup of grated spinach and sesame seeds with seasonal onion and Japanese ginger.

副菜盛合せ《Assorted side dishes》※All served together.
ⓐブロッコリーとセロリの豆苗、ゴボウあん蒸し
Steamed broccoli and celery with bean sprouts and burdock root starch.
ⓑアスパラの絹さやと焼き海苔の衣焼き
Baked asparagus in a batter with snow peas and nori seaweed.

主菜 《Main dish》
さつま芋、菜の花、椎茸の豆乳マスタード煮
Simmered sweet potato, canola flower and shiitake mushroom
with soy milk and mustard.

食事《Japanese mixed rice》
タケノコとフキと油揚げの炊き込みご飯(味噌汁 漬物)
使用米:栃木県さくら市産 『なすひかり』
Rice cooked with bamboo shoots, butterbur and deep-fried tofu in
earthenware pot.(miso soup & pickles)
Rice used: Tochigi rice “Nasuhikari” (Rice can be refilled.)

甘味《Dessert》
Rice flour dorayaki with cherry blossom bean paste.
