味農家コース(Non-vegetarian full course)
ベジタリアンコース(Vegetarian full course)/for VEGAN
2つのコースの違いは、出汁だけです。(ベジタリアンコースは、昆布と野菜の出汁です。)
The only difference between the two courses is the broth.(The vegetarian course is
a soup stock of kelp and vegetables.)

先付《1st appetizers》
日替わりの季節の野菜の一品
Daily Seasonal Vegetable Dishes.

前菜《5 kinds of 2nd appetizers》 ※All served together.
Dressed canola flower, crown daisy and fried burdock root with yuba and wasabi.
②カブとブロッコリーと切り干し大根のピリ辛マリネ
Spicy marinated turnip, broccoli and dried radish.
③長芋の南瓜とクルミの米粉ガレット巻き
Rice flour galette with pumpkin and walnuts rolled with yam.
④里芋と蕗の味噌きんちゃく揚げ
Deep-fried taro and butterbur with miso
paste in deep-fried tofu.
⑤大根おろしとしめじのポン酢寒天テリーヌのワカメ巻き
Ponzu flavored agar terrine with gratedradish and shimeji mushrooms wrapped
in wakame seaweed.

お椀《Soup》
小松菜と椎茸ともやしのみじん吸物
Clear soup with chopped komatsuna, shiitake mushrooms and
bean sprouts.

副菜盛合せ《Assorted side dishes》※All served together.
ⓐさつま芋とアボカドと百合根の柚子胡椒蒸し 揚レンコンのせ
Deep-fried lotus root chips topped with steamed sweet potato, avocado and lily bulb with yuzu pepper.
ⓑ粒マスタード入り高野豆腐のおろし蓮根挟み焼き
Grilled dried tofu filled with grain mustard and
sandwiched between grated lotus root.

煮物 《Simmered dish》
浅漬け白菜とネギのソテー マッシュルームと糸寒天の餡かけ
Sauteed pickled Chinese cabbage and green onion with mushrooms and
agar agar starchy sauce.

食事《Japanese mixed rice》
大根と金時人参とごぼうの炊き込みご飯(味噌汁 漬物)
使用米:栃木県さくら市産 新米 『なすひかり』
Rice cooked with radish, carrot and burdock in
earthenware pot.(miso soup & pickles)
Rice used:Tochigi rice "Nasuhikari”
※Rice can be refilled.

甘味《Dessert》
Rice flour pudding with kumquat.
