先付《1st appetizers》
人参とエノキと絹さやのレモン炒め
Fried carrot, enoki mushroom and pea with lemon.

前菜《5 kinds of 2nd appetizers》 ※All served together.
Daikon radish, Japanese mustard spinach, komatsuna and avocado with mustard and butterbur sprouts miso.
・スナップエンドウと豆苗とエリンギの八朔ドレッシング和え
Snap peas, pea shoots and eringi mushroom with Hassaku(Japanese
citrus.)dressing.
Bamboo shoots dipped in soy sauce and topped with nori seaweed.
Deep-fried taro and shiso leaves wrapped with lotus root.
・新玉ねぎのもずく酢和え ブロッコリースプラウト添え
Seasonal onion with mozuku vinegar and broccoli sprouts.

お椀《Soup》
ウドとゴボウの米粉かき揚げのお吸物 三つ葉添え
Clear soup with udo(edible wild plants) and burdock tempura,
served with Japanese parsley.

蒸物《Steamed dish》
Steamed asparagus, butterbur and broccoli with grated turnip,
flavored with yuzu citrus pepper(condiment paste made from
yuzu zest and chili peppers).

煮物 《Simmered dish》
キャベツと春雨の生姜煮 南瓜と椎茸のピリ辛味噌炒め添え
Simmered cabbage and glass noodles with ginger, and fried squash
and shiitake mushroom with spicy miso.

食事《Japanese mixed rice》
じゃが芋、しめじ、グリンピース、茗荷の炊き込みご飯(味噌汁 漬物)
使用米:山形県庄内地方産 特別栽培米 『雪若丸』
Rice cooked withpotatoes, shimeji mushrooms, green peas,
Japanese ginger1 in earthenware pot. (miso soup & pickles)
Rice used:Yamagata rice "Yukiwakamaru”
※Rice can be refilled.

甘味《Dessert》
Steamed buns with cherry blossom bean jam.
