Deep-fried turnip with red shiso miso
paste, served with sudachi.

Garden bean, walnut and
okra with ginger and aonori seaweed.
・豆乳チーズ入り南瓜ピーマン焼き
Baked pumpkin with soy milk cheese and green bell pepper.
(Soy milk cheese is 100% plant-based.)
Shimeji mushrooms, chrysanthemum, green onion and
lotus root baked in rice powder with vinegared soybean
powder.
Dressing cucumber and
radish with shiso leaves and sesame seeds.

Grilled
ginkgo and sweet potato skewers.
お椀《Soup》
ゴボウと人参のきんぴらの豆乳すり流し 揚げごぼう添え
Soup with grated fried burdock and
carrot kinpira with soy milk,
served with fried
burdock.
蒸物《Steamed dish》
トマト、玉ねぎ、エノキの白いんげん蒸し 柚子胡椒風味 バジル添え
Steamed tomato, onion, enoki mushroom and white bean
paste
with “Yuzu”citrus chili paste and basil.
煮物 《Simmered dish》
ナス、もやし、豆苗のおろし油揚げ煮 大根おろし添え
Eggplant, bean sprouts, and pea shoots simmered in grated
deep-fried
tofu with grated radish.

じゃが芋うす揚げ、舞茸、青大豆の炊き込みご飯(味噌汁 漬物)

Rice cooked with Potato chips,
maitake mushrooms, green soybeans
in earthenware pot(miso soup & pickles)
Rice used:Yamagata rice "Yukiwakamaru”

Daifuku(rice cake) filled with muscat.
