先付《1st appetizers》
焼きナスとキュウリの生姜昆布和え
Grilled eggplant and cucumber with ginger and konbu.

前菜《5 kinds of 2nd appetizers》
pea sprouts, kiriboshi-daikon (dried radish) and green soybeans
with nori seaweed.
・春キャベツ、絹さや、エリンギ、ピーナッツのレモン和え
spring cabbage, pea, eringi mushroom and peanuts with lemon.
Baked fresh ginger and avocado with potato sandwiches.
Zucchini and onion with tomato flavored tofu.
・ネギとパプリカと豆乳チーズをのせたオクラ串焼き
Okra skewers topped with green onion, bell pepper and soy cheese.
(Soy milk cheese is 100% plant-based.)

お椀《Soup》
大根の煮物のすり流し とろろ昆布とししとうのマスタード和えを添えて
Soup with grated cooked daikon radish. To this soup I added
shaved kelp and shishito peppers with mustard.

蒸物《Steamed dish》
小松菜、アスパラガス、インゲンの細切り蒸し
エノキ茸と油揚げの甘みそ添え
Steamed shredded komatsuna, asparagus and green beans.
This dish was topped with enoki mushrooms and fried tofu with
sweet soybean paste.

煮物
《Simmered dish》
ピーマン、椎茸、レタス、ゴボウの長芋おろし柳川煮
Simmered green bell pepper, shiitake mushrooms, lettuce,
and burdock root over grated yam.

食事《Japanese mixed rice》
空豆と茗荷の炊き込みご飯(味噌汁 漬物)
使用米:山形県庄内地方産 特別栽培米 『雪若丸』
Rice cooked with Fava bean and Myoga ginger in earthenware pot
(miso soup & pickles)
Rice used:Yamagata rice "Yukiwakamaru”
※Rice can be refilled.

甘味《Dessert》
Suama rice cake with orange jam.
